Ingredients
2 lbs beef chuck, cut into 1-inch pieces
1/4 cup all-purpose flour
3 tablespoons vegetable oil
1 large onion, chopped
3 cloves garlic, minced
3 carrots, peeled and sliced
2 celery stalks, sliced
4 potatoes, peeled and cut into large chunks
4 cups beef bro
Directions

Season the beef chunks with salt and pepper, then toss them with flour to coat.
In a large pot, heat the vegetable oil over medium-high heat. Add the beef and cook until browned on all sides. Remove the beef and set aside.
In the same pot, add the onion and garlic, cooking until softened.
Return the beef to the pot along with carrots, celery, potatoes, beef broth, red wine (if using), thyme, rosemary, tomato paste, and bay leaves. Bring to a boil, then reduce heat to low, cover, and simmer for about 2 hours, or until the beef is tender.
Stir in the frozen peas and cook for an additional 5 minutes. Remove bay leaves before serving.
Serve hot, garnished with fresh parsley if desired.
