1 cup all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
2 tablespoons unsalted butter, melted
1 large egg
1 teaspoon vanilla extract
Directions

In a large bowl, whisk together flour, sugar, baking powder, and salt.
In another bowl, beat together milk, melted butter, egg, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; the batter should have small lumps.
Heat a non-stick skillet over medium heat and lightly grease with butter or oil.
Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 1-2 minutes.
Flip and cook the other side until golden brown, about 1 more minute.
Serve hot with your favorite toppings.
