Ingredients
2 cups basmati rice
1.5 lbs chicken, cut into pieces
4 tablespoons vegetable oil
2 large onions, thinly sliced
2 teaspoons ginger garlic paste
1 cup yogurt
1/2 cup fresh cilantro, chopped
1/2 cup fresh mint leaves, chopped

Directions

Rinse the basmati rice until the water runs clear, then soak in water for 30 minutes. Drain.
In a large pot, heat the vegetable oil and fry the onions until golden. Add the ginger garlic paste and fry for a minute.
Add the chicken pieces and fry until they start to brown.
Mix in the biryani masala, turmeric, salt, and fry for a few minutes.
Add the yogurt, cilantro, mint leaves, and lemon juice. Cook until the chicken is half done.
Layer the chicken with the rice, add water, and sprinkle saffron strands on top.
Cover and cook on a low heat until the rice is done and the chicken is tender.
Garnish with fried onions before serving.
