Ingredients
2 cups all-purpose flour
1/2 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
3/4 cup milk
1/4 cup vegetable oil
1 egg
1 teaspoon vanilla extract
1 cup finely chopped apple
Directions

Preheat oven to 375°F (190°C).
In a large bowl, combine flour, sugar, baking powder, and salt.
In another bowl, whisk together milk, oil, egg, and vanilla.
Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
Fold in the chopped apple.
Spoon the batter into a greased or lined muffin tin, filling each cup about 3/4 full.
Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Allow muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
