1 and 1/2 cups graham cracker crumbs
1/4 cup unsalted butter, melted
1 cup plus 2 tablespoons granulated sugar
3 (8 ounce) packages cream cheese, softened
1 teaspoon vanilla extract
3 large eggs
1 cup sour cream
Directions

Preheat oven to 325°F (165°C).
Mix graham cracker crumbs, melted butter, and 2 tablespoons sugar. Press onto bottom of 9-inch springform pan.
In a large bowl, beat cream cheese, 1 cup sugar, and vanilla until smooth. Add eggs one at a time, beating just until blended.
Stir in sour cream until smooth. Pour over crust.
Bake for 55 minutes, or until center is almost set. Turn off oven; leave cheesecake in oven for 1 hour with door ajar.
Refrigerate cheesecake for at least 4 hours or overnight. Serve chilled.
