100g pancetta
350g spaghetti
2 large eggs
3/4 cup grated Parmesan cheese
1 clove garlic, peeled
Salt and freshly ground black pepper to taste

Directions
Boil spaghetti in salted water according to package instructions.
While the pasta is cooking, fry the pancetta with the garlic in a large pan until crisp. Then remove and discard the garlic.
Beat the eggs and Parmesan together, seasoning with a little freshly ground black pepper.
Drain the pasta and add it to the pan with the pancetta. Remove from heat.
Quickly pour in the egg and cheese mixture, and use the pasta water to adjust the consistency if necessary.
Serve immediately, garnished with more grated Parmesan and pepper.
